Rooted in the European tradition of my training in the Netherlands but heavily influenced by local flavors and ingredients, our sausages are a source of pride and passion. We are committed to using the highest quality local meats paired with interesting, flavorful and balanced ingredients. Our sausage menu is extensive. Still, be sure to look for monthly specials, usually based on a seasonal local ingredient.
Smoked meats have always been a special part of charcuterie – and we love our smoker. Our standard bacon is lightly smoked in apple wood; the HDP bacon is first encrusted in herb-de-Provence before receiving the smoke spa treatment; the Bratwurst, Andoullie, and Elk sausage are all slow smoked as well; and, the Bacon Jam – really, spreadable bacon! – is a smokey condiment to meat, an omelet filler, or a bread & cheese enhancer — just give it a try.
We recognize that making good, slow food might require time that you simply don’t have. But we do. Our prepared meals focus on the recipes which require time, care and special ingredients that might not fit into your day. The crust for our chicken and pork pies, for instance, include rendered leaf lard, butter and bacon, with a classic white-sauce filling – you just need to bake. For a Chef, Charcuterie affords a real opportunity both to honor traditional technique and to be creative – to have fun. For our customers, its an opportunity to experience traditional though less familiar fare, as well as to obtain difficult to find ingredients for your own cooking. For example, our Ice Box currently contains, among other culinary treats, Duck Confit, duck legs lightly cured, then slow cooked in rendered duck fat – we seal it and provide it ready for re-heating; Quanciale, cured pork jowl rubbed with coarse ground pepper and coriander, a traditional Italian bacon alternative and ingredient to many fine Italian sauces; Duck Pastrami, brined, coated in coriander and black pepper, then house smoked with apple wood; or, unleash your own inner Chef with Trotter Gear, a natural aspic drawn from a slow pork reduction, used to add body to your sauces, gravies and other dishes looking for flavor.
